The vegan version of this lemon curd will not be the same bright yellow as the version that includes egg yolk. I thought that substituting limes for the lemons would result in a fairly tasty lime curd, but my family did not agree! The lime curd version was way too sour. If I make it again, I’ll add more sugar, extra vanilla and a touch more salt. I’ll update this post next time I make a lime pie!
